The study developed a novel film by integrating ZnGlu MOF into a blend of anthocyanins and gelatin to enhance freshness detection. The film with 2 % ZnGlu MOF was the most effective due to its dense structure and superior crystalline quality. The adsorption behavior of the films adhered to Langmuir and Freundlich models, indicating favorable adsorption characteristics. The adsorption kinetics followed pseudo-second-order and Elovich equations, suggesting chemisorption and diffusion processes. The films exhibited a visible color change from brownish red to green when exposed to ammonia, indicating their sensitivity to ammonia, a key freshness indicator.
