Để đánh giá thực trạng vệ sinh an toàn thực phẩm của thịt heo trong quá trình phân phối, bày bán trên địa bàn thành phố Tuy Hòa, Phú Yên, chúng tôi đã khảo sát chợ tập trung thông qua bảng câu hỏi phỏng vấn người bán thịt và lấy mẫu xét nghiệm. Kết quả cho thấy, qua các thời điểm được khảo sát, tỷ lệ mẫu thịt heo đạt TCVN 7046:2002 chiếm 64,17%, tỷ lệ mẫu không đạt TCVN 7046:2002 chiếm 35,83%. Vệ sinh tại chợ nói chung và nơi bày bán thịt heo nói riêng còn nhiều bất cập. Hình thức bày bán thịt còn chưa đảm bảo vấn đề vệ sinh an toàn thực phẩm. Từ khóa: chợ, thịt heo, vệ sinh an toàn thực phẩm, Phú Yên.In order to assess the current realities of food hygiene and safety of the fresh pork during the process of distribution and display for sales in Tuy Hoa city, 3 traditional markets were investigated through interviewing butchers and sample tests. The results showed that the rate of pork samples reaching TCVN 7046:2002 accounted for 64,17%, the rate of unsatisfactory samples for TCVN 7046:2002 accounted for 35,83%. In general, there are still many problems regarding the hygiene at the markets in general, and at the pork-selling places in particular.
