Khảo sát này nhằm đánh giá mức độ nhiễm E.coli , Salmonella và tồn dư một số kháng sinh trên thịt lợn, thịt gà tại các cơ sở giết mổ (CSGM) và cơ sở kinh doanh (CSKD) thuộc 4 tỉnh An Giang, Vĩnh Long, Đồng Tháp và Cần Thơ. Kết quả xét nghiệm cho thấy: đối với thịt lợn tại cơ sở giết mổ, tỷ lệ nhiễm E.coli là 38,89% và Salmonella là 14,44%, tại cơ sở kinh doanh, tỷ lệ thịt lợn nhiễm E.coli là 11,11% và Salmonella là 27,78%. Đối với thịt gà tại cơ sở giết mổ, tỷ lệ nhiễm E.coli là 20% và Salmonella là 15%, tại cơ sở kinh doanh, tỷ lệ thịt gà nhiễm E.coli là 62,5% và Salmonella là 37,5%. Kết quả khảo sát tồn dư kháng sinh trên 54 mẫu thịt lợn và 24 mẫu thịt gà cho thấy Enrofloxacine vượt mức cho phép ở thịt lợn là 2/44 mẫu (3,7%) và ở thịt gà là 2/24 mẫu (8,33%) .The objective of this survey aimed at assessing the level of E.coli, Salmonella contamination and residues of some antibiotics in pork, chicken meat at the slaughterhouses and business establishments in 4 provinces of An Giang, Vinh Long, Dong Thap and Can Tho. The surveyed results showed that at the slaughterhouses, the rate of pork contaminating with E.coli was 38.89% and with Salmonella was 14.44%

At the slaughterhouses, the rate of chicken meat contaminating with E.coli was 20% and with Salmonella was 15%, while at the business establishments, the rate of chicken meat contaminating with E. coli was 62.5% and with Salmonella was 37.5%. The surveyed results on antibiotic residues from 54 samples of pork and 24 samples of chicken meat showed that enrofloxacine exceeded the permitted level in pork was 2/44 samples (3.7%) and in chicken meat was 2/24 samples (8.33%).
