In this paper, the process of bacteriocin collection from Bacillus safensis NBRC 100820 was studied. By using this procedure, 20 ml of the purified bacteriocin was recovered from 1.0 l of the initial culture medium. The product has a protein concentration of 17.5±0.2 mg/ml, a pH of about 5.0±0.2 and active unit of 732.2 AU/mg. Physico-chemical and microbiological parameters of the recovered bacteriocin after purification showed that product did not contain pathogenic microorganisms E. coli, Salmonella, S. arueus, coliforms, yeasts and molds, and heavy metals Hg, As, Pb, Cd. The product conform to the standards on food additives according to TCVN 10637:2015.
