Nghiên cứu được thực hiện với mục tiêu xác định các điều kiện thích hợp trong quy trình chiết xuất betacyanins và khảo sát ảnh hưởng của pH đến độ bền màu của dịch chiết betacyanins từ lá thài lài tía (Tradescantia pallida). Các yếu tố khảo sát bao gồm dung môi (nước, ethanol, methanol), điều kiện chiết xuất và tỷ lệ nguyên liệu/dung môi (w/v). Tổng hàm lượng betacyanins (xác định bằng phương pháp quang phổ UV-Vis) sử dụng làm thông số kiểm soát quá trình thí nghiệm. Kết quả cho thấy hàm lượng betacyanins trong dịch chiết cao nhất khi chiết xuất bằng methanol 50% với tỷ lệ nguyên liệu/dung môi (w/v) là 15, trong điều kiện siêu âm 15 phút ở 60 °C, công suất 200W. Dịch chiết thu được với tổng hàm lượng betacyanins cao nhất trong dịch chiết là (7,209 ± 0,061 (mg/L)). Bên cạnh đó, ảnh hưởng của pH đến màu sắc, cực đại hấp thu và độ bền của betacyanins chiết xuất từ lá thài lài tía cũng đã được khảo sát. Kết quả khảo sát cho thấy, dịch chiết betacyanins từ lá thài lài tía có màu và cực đại hấp thu thay đổi theo pH, không bền trong môi trường kiềm.Từ khóa Thài lài tía (Tradescantia pallida), betacyanins, UV-Vis, ethanol, methanolThis study aimed to determine the conditions suitable in the process of extracting betacyanins and investigating the effect of pH on the color fastness of betacyanins extracted f-rom the purple heart (Tradescantia pallida) leaf. Survey factors included solvents (water, ethanol, and methanol), extraction conditions, and material/solvent ratio (w/v). The total content of betacyanins (determined by UV-Vis spectroscopy method) was used as a control parameter for the experimental process. The results showed that the highest content of betacyanins in the extract when extracted with 50% methanol and the ratio of material/solvent (w/v) was 1 5, under the ultrasonic condition of 15 minutes at 60 °C, the capacity of 200W. The extract obtained with the highest total amount of betacyanins in the extract was 7,209 ± 0,061 mg/L. Besides, the effect of pH on the durability, color, and maximum absorption of betacyanins extracted f-rom the Tradescantia pallida leaves was also investigated. The survey results showed that betacyanins extracted f-rom the Tradescantia pallida leaf had the color and maximum absorption change with pH, unstable in an alkaline solution.Keywords Purple heart (Tradescantia pallida, betacyanins, UV-Visible, ethanol, methanol
