Nghiên cứu mô tả cắt ngang tiến hành tại 29 trường tiểu học và mầm non có bếp ăn bán trú trên địa bàn thành phố Buôn Ma Thuột, tỉnh Đăk Lăk năm học 2023-2024. Mục tiêu nghiên cứu là xác định tỷ lệ nhiễm vi khuẩn Escherichia coli giả định

Bacillus cereus giả định và Salmonella spp. trong thực phẩm được cung cấp trong bữa ăn bán trú tại các trường học tham gia nghiên cứu. Kết quả phát hiện có 19/29 trường học tham gia nghiên cứu có mẫu thực phẩm bị ô nhiễm vi sinh vật (63,33%). Có 33/147 (22,34%) mẫu thực phẩm thu được tại các bếp ăn tập thể trường học bị ô nhiễm ít nhất 1 chỉ tiêu vi sinh vật trong số 4 chỉ tiêu kiểm nghiệm, trong đó có 18 (12,24%) mẫu nhiễm E. coli giả định, 11 (7,48%) mẫu nhiễm Staphylococcus aureus, 15 (10,2%) mẫu nhiễm Bacillus cereus giả định, 3 (2,04%) mẫu nhiễm Salmonella spp., 12/147 (8,16%) mẫu nhiễm từ 2 chỉ tiêu vi sinh vật trở lên.The cross-sectional descriptive study was conducted at 29 primary schools and preschools with boarding kitchens in Buon Ma Thuot City, Dak Lak province in the 2023- 2024 school year. There were 33/147 (22.34%) food samples collected at school collective kitchens contaminated with at least 1 microbial indicator out of 4 tested indicators, including 18 food samples (12.24%) infected with Escherichia coli, 11 food samples (7.48%) infected with Staphylococcus aureus, 15 food samples (10.2%) infected with Bacillus cereus and 3 food samples (2.04%) infected with Salmonella spp. 12/147 food samples (8.16%) contaminated with two or more microbial indicators.
