Method of using Viscozyme L enzyme for treating seaweed in the production of carrageenan from seaweed Kappaphycus alvarrezii (Doty) Doty has several advantages over the NaOH treatment method. Specifically, Viscozyme L enzyme treatment of seaweed gave higher yield and higher carrageenan gelation degree, overcoming the disadvantages of carrageenan production by NaOH treatment where carrageenan obtained was often mixed with chemicals, difficult to be refined, causing environmental pollution, and harmful to workers.
