The paper studied the composition of plant species which were used as vegetables by ethnic minority in Dak Lak and Gia Lai, 2 provinces of the Central Highland. The study identified 234 species belonging to 169 genera, 71 plant families in Oak lak province and Gia lai province which were used as vegetables with diverse life forms. The herbaceous plant groups accounted for the largest proportion, with 56 percent of them, followed by group of lianas with 15 percent, group of wood plants with 23 percent, and only 6 percent for shrub species. It also mentioned in the checklist of 23 species in 17 plant families whose function as vegetables was newly discovered in these provinces.
