In this paper, polyphenol extraction was carried out by using queous mixtures of ethanol extraction from algae Sargassum mcclurei collected from Nha Trang, Khanh Hoa province. The aims of the study is to investigate the influence factor on the efficiency of the extraction of polyphenol from algae Sargassum. This work was focused on researching of several main influence factors on the extraction of polyphenol from algae sargassum including extraction time, solventl,neaterial ratio and extraction temperature. The range of these factors to get high yield of both polyphenols and antioxidant activity were 80-90 min, 15/1-20/1 and 80-90°C, respectively.
