Lipid and fatty acid compositions of some Vietnamese Holothurian, sea urchin and starfish species were investigated. The results showed that the studied species of Holothurian, sea urchin and starfish were rich in polyunsaturated of fatty acids PUFAs, especially the fatty acids of the omega 3 and omega 6 family which are used in food, medical and phannaceutical sectors, such as C20:4 (n-6) AA, C20:5(n-3) EPA, C22:6 (n-3) DHA.
