Lipid and fatty acid composition of some Vietnamese Holothurian sea urchin and starfish species were investigated. The results showed that the studied species of Holothurian, sea urchin and starfish were rich in polyunsaturated of fatty acids PUFAs, especially the fatty acids of the omega3 and oinega6 family which are used in food, medical and pharmaceutical sectors, sllch as C20:4. (n-6) AA, C20:5(n-3) EPA, C22:6 (n3) DHA.
