The study of the attitudes and practices of food safety and hygiene on 200 subjects who are waiters and waitresses at canteens of businesses in Hai Duong city. The results showed that 67.5 percent waiters and waitresses have good attitude 'in observance of food hygiene and safety, while 32.5 percent have not good attitude and weak attitude
71 percent waiters and waitresses have correct attitude when there is food poisoning in the canteen
12.5 percent of them have the wrong attitude
there is 16.5 percent waiters and waitresses do not wash their hands before preparing food
15.5 percent waiters and waitresses not use separate instruments (to contain raw, cooked food) during food processing, distribution, 15.0 percent waiters and waitresses do not wearing gloves when processing and distribution of cooked foods
Only 53 percent waiters and waitresses practice rightly, and sufficiently food-processing steps.
