The objective of this study is to validate ion chromatography method for the determination of Na, K, Mg and Ca in food. Food items were selected from the list that have no data in the Food Composition Table. The food samples were ashed and then diluted by chlohydric acid prior to the quantification of minerals using cation exchange chromatography. The validated parameters including repeatability and recoveries met AOAC standard. The analytical results from 99 samples belonging to 33 food items will be used to update the Food Composition Table, and supporting other nutrition research.
