Fresh Shiitahe mushroom (LentinuJa edodes) have rich nubients, however they are dried by the sun therefore they have poor quality. This study was performed to determinate of suitable drying method for Shiitake mushroom base on the analysis of moisture rate, drying time and quality of dried Shitake mushroom such as color, scent and vitamin content The experimental analyse determined heat pump drying method is suitable for Shiitake mushroom drying. The results of Shiitahe mushroom drying by heat pump drying method with different of drying temperatures have determined the appropriate temperature for drying mushroom drying is 45°C. The predicted equation for moisture content of Shiitahe mushroom versus drying time in the drying process was determined.
