This research was carried out on the Square - head Climbing Perch at Fisheries Science Laboratory, College of Agriculture and Forestry, Hue University from July to December 2013 with the aimed at assessing flesh quality change of Anabas testudineus cultured in the different salinity levels through analyzing the chemical composition of muscle fish, the rate of mass of compositing body fish, evaluating quality of flesh fish after being boiled with sensory evaluation methods. The experiment was completely randomized designed with 3 treatments contained enviromental salinity level of 0, 12, 24 percent and 3 replications, in that, the 0 percent salinity level used at control group. The research results showed that the square-head climbing perch cultured in 12 percent salinity water have muscle mass percentage of fish accounted for 40.60 percent of whole body mass, chemical composition of musclefish was slightly different with fish lived in freshwater, and quality of flesh fish is improved compared to fish cultured in freshwater.
