Granular maize starch was treated under nitrogen-plasma by dielectric barrier discharge device (DBD). Starch samples were analyzed by FTIR FIIR (Fourier transform infrared spectroscopy), X-ray diffraction spectroscopy, scannin electron microscopy and alpha amylase (fermamyl SC~ hydrolysis curves to investigate structure changes. Nitrogen-plasma treatment caused the double helix structure to amorphous structure but it did not change crystallinity and X-ray pattern of maize starch (A-type). However, treated samples were more easier to be digested base on nitrogen-plasma treatment condition. Base on DBD device, which was made by the university, starch modification under nitrogen-plasma is an physical method can be apply in industry, especially in Vietnam.
