Nutritious compositions of Dioscorea persimilis tuber harvested from Quang Binh province of Vietnam were investiaged and evaluated the hydrolysis-resistance in-vitro of the obtained starch against the intestinal amylase enzymes. Noted that the starch amount accounted for about 61.8 percent of the absolutely dried tubers, including 72.9 percent of resistant starch (considerably stable against the enzymic hydrolysis by amylase). High resistance of this starch to enzymic hydrolysis suggested theoretical basis for applying the research to processing functional foods for diabetes-treating use.
