To optimize extraction for black tea of OP, this research focus on three factors are temperature, the rate of raw material/water and time on the extraction process, as well as the influence of these factors at the same time are researched also. Planning experiments of extraction showed that 13 selected experiments can describe most of influence of three factors. Results of the optimization process showed that the extraction temperature from 93-100oC, the rate of material/ water (g/ml) from 7.3/45 - 8.5/45 and time from 8-10 minutes is the best, when the content of dissolvent substances is 5.2 Bx.
