The article reviews research results relating to applications of enzymes from fish and invertebrates in food technology, the optimal conditions for processing, advantages and disadvantages of enzymatic method and final product as compared to traditional one. Some enzymes originated from fish and invertebrates showed potential possibilities and offered a wide range of applications, while others required further investigation before coming to successful solutions in food technology.
