In order to manage the seafood safety in the seafood supply chain, a better understanding of current seafood supply practical activities in the markets is very necessary. In this study, the 50400 actions of 384 subjects working at the fish ports and fish markets in Khanh Hoa were observed, using notational analysis. The results of observation show that among required actions, the observed subjects performed 11.7 percent hand washing actions, 14.8 percent utensil and surface cleaning actions
40.1 percent subjects were wearing the gloves, 38 percent subjects were wearing the hair covering hats, 7.6 percent subjects were wearing masks 75.5 percent subjects were wearing boots during working. However, these actions were only considered the attempted actions and there were not the compliance with the recommendations of the Regulation. Therefore, seafood safety practices of the subjects working at the fish ports and fish markets in Khanh Hoa were not good.
