Astaxanthin (AXT), a keto-carotenoid with potent antioxidant properties, has the ability to reduce lipid peroxidation and effectively inhibit lipid peroxidation caused by free radicals. Given the oxidative susceptibility of AXT during processing, storage, and digestion, along with the effectiveness of novel food-grade drug delivery systems, we engineered an AXT-loaded procyanidins (PCs) and sea cucumber peptide (SCP) nanoparticles (AXT@NPs) to enhance its bioavailability.
