Nghiên cứu này được tiến hành nhằm đánh giá mức độ nhiễm khuẩn trên mẫu thịt lợn tươi lấy tại 4 cơ sở giết mổ trên địa bàn thành phố Thanh Hóa, tỉnh Thanh Hóa. Kết quả xét nghiệm 67 mẫu thịt tươi thu thập từ 4 cơ sở giết mổ trên cho thấy 100% số lượng mẫu xét nghiệm đều đạt tiêu chuẩn về chỉ tiêu cảm quan, 62,69% số lượng mẫu đạt tiêu chuẩn về giới hạn nhiễm tổng số vi khuẩn hiếu khí, 70,15% số mẫu đạt tiêu chuẩn về giới hạn nhiễm E. coli, 89,55% số mẫu đạt tiêu chuẩn về giới hạn nhiễm Salmonella, 62,69% số mẫu đạt tiêu chuẩn về giới hạn nhiễm Coliforms tổng số, 64,18% số mẫu đạt tiêu chuẩn giới hạn Staphylococcus aureus. 100% số mẫu đạt tiêu chuẩn về giới hạn nhiễm Clostridium perfringens.This study was conducted to evaluate the levels of bacterial contamination in the fresh pork samples collected from 4 pig slaughterhouses in Thanh Hoa city, Thanh Hoa province. The testing result of 67 fresh pork samples collecting from the above mentioned places showed that 100% of the testing samples reached the standards of organoleptic properties, 62.69% of the samples reached the standards of total aerobic bacteria contamination level
